Timing is important in livestock markets, and especially so in lamb markets. Lamb prices can fall up to 30% in winter or spring when new season supply ramps up. So, if you are targeting price premiums at the tail end of winter, you should do the numbers now to see if this strategy will pay off. So what do the stats say?
