Mutton markets have clearly outperformed lambs since sales resumed a couple of weeks ago, supported by a more substantial contraction in throughput levels. As of last week, the NSW mutton indicator saw the discount to the Eastern States Trade Lamb Indicator (ESTLI) narrow to 177¢, or 32%. Has mutton become too expensive? What are the prospects for mutton going forward?
