Over the last 30 years lamb slaughter weights have increased substantially. Improved animal nutrition, genetics and health, coupled with a shift in demand for heavier carcasses underpinned this trend. However, due to the increasing variability in seasonal conditions, slaughter weights have varied considerably since 2002. How those changes can impact heavy lamb premiums and what to expect for the new lamb crop?
